What I have been Eating – Part 1

May 1, 2019 by Vicky Leave a Comment

As you may recall I eat food based on a meal plan. Up until recently my Trainer Felicity Neale would set out the meal plan for me which was great as I could give my input about what I liked and she would design the plan for me.

For probably about the last 10 weeks or so I have been having a go at designing my weekly meal plan which has been really interesting for me as well as tricky and also fun!

I thought I would share my meal plans from time to time here just in case anyone who reads the blog is looking for some food inspiration! I won’t share the exact measurements of each component of the meal because they are specific to me and what works for me may not work for everyone else. Also I am trying to maintain my weight with the aim of skin removal surgery rather than specifically loose fat.

For Part 1 I thought I would share my meal plan which ran from 15 to 28 April 2019. I do tend to eat the foods over just 7 days but with the Easter break I stayed on this one for two weeks.

Pre Work Out

Before I work out I always, regardless of the meal plan, have the following:

A teaspoon of Apple Cider Vinegar diluted in water

  • Vital Greens mixed with Psylium Husk
  • 100ml Apple Juice
  • Scoop of protein powder mixed in water

Post Work Out / Breakfast

For this plan I was lucky as the foods I could eat formed a good breakfast and dessert!

  • Scrambled eggs with a drop of water cooked with some rocket / kale
  • White Rice and Peaches in Juice which I heated up and sprinkled with some mixed spice (as I don’t like cinnamon)

I also usually have a big glass of water and a cup of coffee with / after my food.

Lunch 1

  • Chicken which I cooked in the slow cooker
  • Asparagus
  • Sweet Potato
  • Olive Oil

Lunch 2

  • Chicken
  • Quinoa
  • Green veggies
  • Olive Oil

Dinner

This dinner probably isn’t everyones cup of tea but I really enjoy eating it (which is essential when you are eating the same thing for 7 days in a row) and I look forward to being able to slot it into my meal plan.

  • Lean Beef Mince
  • Cabbage, red onions and mushrooms cooked with garlic and chilli
  • Sugar free jelly (which is great if you have a sweet tooth).

Quantities

Whilst I don’t want to give the measurements for each component of the meal, the above calories added up to about 1686 a day with 138g protein, 65 grams of fat and 95g carbs. I don’t include the green veggies etc in my calorie count

Meal Prep

I pre-cook as much of the food as possible on the Saturday or Sunday otherwise there is a risk I will be too tired from work and that makes cooking pretty unpleasant. The lunches get measured and boxed so I can grab the boxes and go for work etc. The breakfast and dinner components get stored in bigger boxes and are measured out as I go.

Birthday Adventures – Blogmas Day 2

December 2, 2018 by Vicky Leave a Comment

Not strictly Christmas or Blogmas related but I wanted to share what we did for my birthday as I had a lovely Birthday weekend.

After finishing work on the 23rd, the Aussie and I drove down to the Gold Coast and caught up with Naomi and her gorgeous cats. We arrived with time to spare for the delivery of the cookie pies which I ordered from Dough House for us to enjoy. The delivery arrived and we were not disappointed and may have sampled one of the cookies!

Cookies Time from Dough House

After a great nights sleep with the sound of the waves down on the beach down below to lull us to sleep we woke up to one of my favourite views.

Good morning Gold Coast

After a round of tea and coffee (and a protein shake for me because I was already hungry as I normally eat at 5am before the gym!) we got dressed and headed to The Paddock Bakery for breakfast where we also met up with the Aussie’s sister and her husband who are driving around Australia at the moment.

I had booked a table in the loft area upstairs. Unfortunately I didn’t take any photos of the space but they have lots on their Instagram page and you will see how gorgeous it is up there.

Naomi and I may have started with a donut before our breakfasts were served. The sugar rush was real and it was probably a good job I choose the Breakfast in Bed which is a savoury breakfast so I didn’t end up with more sugar, although it defeated me and I ate more breakfast, less bread!

We then spent a bit of time at Robina where I picked up a couple of Christmas presents and we collected some food from Woolworths for our dinner.

A nanna nap later I suggested we go for a swim in the sea and we popped on our swimming togs and I grabbed my underwater camera. We did some wave jumping and paddling enjoying the cooling waters as the sun went down.

After a shower we had a kind of tapas dinner of meat, cheese, crackers and salad before settling down to watch a movie and then bed.

The next morning started nice and slow with a cooked breakfast of eggs, bacon and toast (I may have had a cookie before hand) and then I enjoyed a lovely bath before we packed up and drove back to Brisbane.

On my actual birthday I was working but my boss let me finish early so it was lovely to get home and spend some time with the Aussie before dinner. After dinner I called my Mum and Dad on FaceTime and it was fantastic to see and spend the time with them on FaceTime. It is now not long until me and the Aussie fly home (19 days but who is counting!) and I am very very much looking forward to it.

My Favourite Meal Plan Meals

September 26, 2018 by Vicky Leave a Comment

As I have mentioned before I work with the fantastic Felicity Neale on my weight loss journey. Felicity works week to week setting me meal plans and exercise based upon our goals which are currently weight loss and fat reduction.

My meal plan is great because I am never hungry! I eat five times a day on gym days and four times a day on non-gym days. I will eat before and after the gym, around 11am and 2pm and again about 6pm.

I cook and meal prep a few days in advance so usually have two or three days of meals ready and then store the different components which make up the meals until I need to prep the next few days. I find this is the best way to stay on plan and avoids the risk of picking something quick and easy and unhealthy just because I am hungry.

I have tried lots of food combinations over the last 6 or so months and it is really showing the results for me too. I tend to have the same meals over the course of a week so when I love the combination this definitely helps boost my meal times.

There are many meal combos that I enjoy / have enjoyed but the ones below are the ones I especially love.

Chicken, sweet potato and green beans – I LOVE sweet potato and chicken is always a winner so every time I have had this on my meal plan I have been pretty excited. I usually season with salt and / or pepper and enjoy some cayenne pepper with it as well. This will absolutely be a meal I will look forward to.

Minced turkey, pumpkin and broccoli – I was finding turkey breast to be quite dry when cooked and stored for meal prep and also quite expensive so tried some turkey mince and found it was delicious. Now whenever turkey is on the menu I buy the mince. This combination with mashed pumpkin and broccoli with some cayenne pepper / chilli is so so good!

Oats, protein powder and peanut butter – this is my absolute favourite breakfast! When I was eating it for breakfast I would have to say that my motivation to get through my gym session, especially if I was having an off day, was the fact that I could have a tablespoon of peanut butter with my oats! I combined the oats and peanut butter with the Women’s Best Salted Toffee Pretzel or Peanut Butter Marshmallow protein powder and they were both perfect in the combination. This is quite possibly my favourite healthy breakfast meal!

I haven’t specified the macros for my meal as Felicity puts them together specifically for me. If you want to try any of the combinations you should make sure they fit your individual macros!

Friday Night Adventures in Brisbane

September 6, 2017 by Vicky Leave a Comment

Last Friday, the Aussie and I hopped onto a bus and headed into the CBD which took about 15 minutes, spitting us out at King George Square where the Brisbane Twilight Markets were happening.

Brisbane Twilight Markets
We are used to markets, and pretty big ones having visited Mindil, NIghtcliff and Parap Markets in Darwin numerous times so had great expectations and I was really impressed and will definitely be going back.

We were also just looking forward to exploring Brisbane at night as we haven’t done that yet and the Twilight Markets were the great start point for that.

The Twilight Markets are a Brisbane City Council initiative where the items on sale are 100% handmade and locally produced items. They also provide live music and a crafting area where this time round they were showing people how to make macrame.

At the markets there were probably 20-30 stalls stocked full with all original hand made items from jewellery, delicious smelling and tasting foods to beautiful art work. I was looking for gift ideas and found plenty of unique and beautiful items to choose from. There were also food samples before buying which almost made it impossible to choose what to eat.

From the schedule on the BrisStyle website and Facebook page it looks like the next Twilight Market is being held at the Workshop Rail Museum on 20 October 2017 and King George Square on 9 December 2017 which will be just in time for those Christmas Gifts!

Diversity@Dusk
We didn’t hear anything about this event beforehand but whilst going for a walk around the CBD we spotted a stage and could hear music through the Brisbane City Library and after a walk around the corner we discovered the Diversity@Dusk event in Reddacliff Place.

This was the grand finale of Queensland’s Multicultural Month and what a great way to conclude the month and celebrate diversity!

There was a band playing all original music Greshka when we arrived who were great and the line up before and after was pretty cool. We found amazing looking and smelling food from all over the world, market stalls and lots of free stalls where you could have a free massage or your name written in Chinese writing amongst other things.

This will be an event that I will visit again next year and will look out for.

After visiting the two events we went for more of a wander around the CBD (I needed the steps for my FitBit!) and were met with more live music, shops open until late and just a great Friday night atmosphere which is something I really missed in Darwin. It reminded me of the UK of nights after work in Bristol where I used to work as a lawyer in some ways which was great. I can say for sure I love city life!
